Tasty Tuesday - Pat's Fettuccine Alfredo


Easiest Fettuccine Alfredo Ever!

Ingredients
1 pound fettuccine noodles
1 stick butter
1 cup heavy cream
1 teaspoon Salt and 1/2 teaspoon black pepper
2 cups grated Parmesan
Directions
Cook the pasta according to package directions.

In a saucepan or skillet over low heat, warm the butter and cream. Season with salt and pepper.

Place half of the Parmesan into a large serving bowl. Pour the warm butter/cream mixture over the top.

Drain the pasta and immediately pour it into the bowl. Toss a couple of times, and then sprinkle in the other half of the Parmesan. Toss to combine, thinning with pasta water if necessary.

Serve immediately as a main course or accompaniment to meat or salad. Delicious!

To make it healthier for the kids, I add 4 cooked boneless, skinless chicken breast that I have sliced into bite size pieces and I add a bag of steamed broccoli.

Tasty Tuesday - Daheap's Bacon Cheese Burger W/Mushrooms and Onions





Prepare ahead of time 8 slices of thick bacon. Set aside on paper towel to drain excess bacon fat.


In a large bowl mix 1lb. Hamburger and salt and white pepper to taste.


Add 1 tablespoon ketchup and ½ teaspoon Dijon mustard, mix well.


Form 4 burgers into round even shapes, then to each burger add and mix completely 1

slice of thick cooked bacon broken into small pieces, reform burgers.


Cook under medium heat till thoroughly cooked. While they are cooking; Place 8-10 medium sized mushrooms (sliced or stems and pieces work) with half a yellow onion in skillet with two tablespoons of butter and cook until onions become caramelized.


Now arrange cooked burgers on broiler safe tray and broil till tops are crispy (careful not to burn or get overdone.) Only takes a few minutes on high broil.


Place burgers on serving plates and wrap each in remaining 4 pieces of bacon (1 each.) Place a single slice of your favorite cheese on top of each bacon burger.


Pour mushrooms, onions, and butter proportionately over each burger and serve.


Can be served alone or as an open face sandwich or on a bun. Drain the butter from mushrooms and onions if you wish to serve on a bun as a normal hamburger. Goes great with a salad or baked beans.

Tasty Tuesday - Spanish Tortilla


I just returned from Spain. I spent 37 days walking the Camino de Santiago, 500 hundred miles from St. Jean Pied de Port, France to Santiago de Compostela, Spain.

During my trek I often enjoyed Spanish Tortilla for breakfast. The potato and egg omelet was a great way to begin a day of walking. Below is a recipe for Spanish Tortilla and I have enjoyed making it since my return. Great way to start a day of writing!

Spanish Tortilla
Ingredients:
  6-7 medium potatoes, peeled
  1 cup of shredded cheese (use cheddar, jack or a mixture)
  1 whole yellow onion
  5-6 large eggs
  2 cups of olive oil for pan frying (I cut way back on the oil)
Salt to taste

Slice the potatoes to 1/8 inch thick
Chop the onions

In a non-stick pan, sauté potatoes and onions in oil on medium to low heat. You want to cook the potatoes until a spatula breaks the slices in two.

Whisk the eggs in a large bowl. Add cooked potatoes and onion, and the cheese. Mix, coating the potatoes.
Add olive oil to non-stick pan, then add potatoes, egg and cheese mixture. Cook on medium to low heat. You want the bottom of the tortilla to brown, leaving the top still runny.

Once the tortilla has browned, you have to flip the tortilla. I using slide the tortilla onto a plate and invert the pan over it to flip the tortilla. Cook until golden brown. Take the pan off the heat and let the tortilla rest for two minutes.
Slide the tortilla onto a plate and cut like a pie to serve.

Variations: Add chopped green onion, green peppers or ham.

In Spain the tortilla is often served with a slice of baguette.
At home, I serve with salsa.

The Saturday Book Diver Interviews Wyatt from Combustion 1: In Heat by Kate Hill

Welcome to the Saturday Book Diver, where we travel to fictional worlds to interview fascinating and sexy characters.

Today I’m in a simply furnished apartment on the planet Pixie in the Silver Iris Galaxy. It belongs to Wyatt, who is currently employed by the entrepreneur Benton Skies.

Wyatt captains a space shuttle owned by Skies’ company. They are currently involved in exploring Earth.

Tall and lean with thick red hair, Wyatt spent twelve years in the military where he also specialized in Earth exploration. Despite his reserved, soft spoken manner, he emanates vigor and the intensity of his green eyes reveals that he’s a man of passion.

I know he’s busy, so I jump into the interview.

SBD: Thank you for talking to us, Wyatt. I understand you’ve recently returned from a trip to Earth. Can you discuss the details?

Wyatt: Our mission is to study human behavior to decide whether we might someday want to interbreed with them.

That concerns me  a little. I hadn’t expected such a straightforward reply.

SBD:  Should the people of Earth be concerned?

Wyatt: Not at all. I admit that Pixie has a violent past, but we’ve developed as a people and our leaders wouldn’t condone any kind of enslavement of another species. At the present time those in power have no interest in breeding with humans, since they believe humans are not quite advanced enough for us. Still, in the future we’re hoping for a possible friendship with Earth.

SBD: It might be true that your leaders have no interest in breeding with humans at the moment, but I’ve heard you became romantically involved with someone on your recent visit. Is that the truth or just a rumor?

Wyatt: [Studies me with those intense eyes for a moment.] It’s true. A woman named Zoey saved my life after I crashed on Earth.

SBD:  She pulled you out of the wreck?

Wyatt: [Grins] No. Pixiens have to mate once a month or else our inner heat will burn us alive. We’ve learned to control this through medication when necessary, but we usually satisfy our cravings with an assigned relief partner. Marriage is very unusual on Pixie. When I crashed on Earth, my medication was destroyed and I had to mate to survive, but I would never take an unwilling partner. Zoey was quite willing.

SBD: Would you describe Zoey in three words?

Wyatt: Compassionate. Stubborn. Inquisitive.

SBD: You’re back here on Pixie now and Zoey is still on Earth. Is there a chance of you two getting together again?

Wyatt: Definitely. I plan on returning to her as soon as I can and I hope that she’ll still be interested.

I can’t see how she wouldn’t be. Wyatt is such a cutie!

SBD: Would you share one of your favorite excerpts from Combustion 1: In Heat?

Wyatt:  Oh yes. I hope you enjoy it as much as I did!

One moment she was comforting him and the next they were kissing passionately.

“Don’t stop, Wyatt,” she breathed. “Please don’t stop this time.”

“Zoey,” he whispered against her lips and kissed her again. This time he stood, lifting her in his arms.

She didn’t protest as he carried her to the bedroom and placed her on the bed. She stared as he unzipped his pants. He wore black briefs beneath and they did very little to hide his big, aroused cock.

He kicked off his shoes and pants. While he removed his socks, Zoey slipped off her high-heeled sandals and wiggled out of her dress.

Lying in bed wearing only her bra and panties, she gazed at him with all the lust she felt.

He sat on the bed and tugged off her panties, sliding them down her legs. Tossing them aside, he leaned forward and kissed her inner thighs.

Zoey unfastened her bra and shrugged out of it.

Stretching out beside her on the bed, Wyatt cupped her face and kissed her. Their tongues met and she moaned softly.

After denying the drives of her body for so long, she was ready to cut loose.

Tasty Tuesday - Spaghetti Sauce and Meatballs

Now that it's September, the weather will be getting cooler, the kids will be returning to school, and warm, scrumptious meals will entice our taste buds.

Here's a recipe I love to make that I found from a Taste of Home magazine. Personally, I like to make the sauce, divide it and use it at later dates for serving over spaghetti, making baked ziti or meatball sandwiches. Making the meatballs are, of course, optional. 

Enjoy!

Spaghetti Sauce and Meatballs

Ingredients for the Sauce:

1 large onion, finely chopped
2 - 4 cloves of garlic, minced
2 Tbsp olive oil
3 cans (10 3/4 oz each) of tomato puree or diced tomatoes (*note, if you use diced, put them through the food processor or mash them before using in the recipe)
1 can (12 oz) tomato paste
1 1/2 cups water
1/4 cup grated Parmesan cheese
1 Tablespoon dried oregano
1 Tablespoon salt
1 Tablespoon sugar

Directions for Sauce:

In a Dutch oven, saute onion and garlic in oil until tender. Add the remainder of the ingredients, mix well. Simmer, uncovered, for 3 hours. 

*If you are adding the meatballs to this sauce, follow the directions below and add the meatballs when the sauce (is at it's midway point) has cooked for 1 1/2 hours. 


Ingredients for Meatballs

1 lb ground beef
1/4 lb ground pork
3/4 cup finely crushed saltine crackers
4 eggs, beaten
2 - 4 cloves garlic, minced
3 Tbsp grated Parmesan cheese
1 tsp dried oregano

Directions for Meatballs

Combine beef, pork and cracker crumbs in a large bowl. Add the eggs, garlic, Parmesan cheese and oregano. Mix well. Shape into 1 1/2 inch balls. Brown in a skillet.
